Sweet Potato “Spring Bake”

Who here has the hardest time getting your kids to eat veggies? I do I do. However with this dish and the yummy spices for some odd reason the kids go for it. I as a mom am not complaining whatsoever. This is a spring bake that everyone will enjoy. I really like the idea of serving this as a side dish with corn beef for Saint Patty’s for all your little hungry leprechauns. Dish up’


  • 2 cups of cubed sweet potatoes 
  • Half a white onion sliced in half rings
  • 2 cups of Brussels sprouts sliced in halves
  • Toss in olive oil
  • The key ingredients are the spices.


1/2 tsp cumin

1/2 tsp chili powder

1/2 tsp garlic

1/2 tsp salt

1/2 tsp pepper

Bake at 400 for 30-40 minutes
